So, loving this Pistachio Macaron cake - so easy to make, from the Ottolenghi test kitchen book. Yes - ok - you need a blender/processor to turn pistachios into a coarse flour, but once done you simply fold them (with some ground almonds) into a whisked egg/sugar mixture. The poached apricots in elderflower cordial was THE perfect accompaniment, and a delicious way to see in the New Year, 💃🍾😋 Here’s to 2024, let’s hope it’s a good one 🤗

There’s Banana Bread - and there’s MY Banana Bread . . . as the second pic reveals, adding some stealth ingredients can usefully UP the nutrient quota.

In this recipe I added chopped dates and walnuts. The polyphenol rich dates add potassium, magnesium and folate, and the walnuts deliver protein and omega-3 fatty acids, as well as magnesium and potassium. These fatty acids are anti-inflammatory and good for brain health. I also substitute half the flour in any given recipe with ground almonds, which again - adds useful protein and healthy fats, which lowers the glycemic value of the cake.

You can do this with any recipe - add stealth ingredients that increase the variety of nutrients and turn a treat into something which adds nutrient VALUE. Nutrients that all systems of the body have evolved to use functionally and as catalysts for enzyme action. We don’t just need calories, or macronutrients (protein, carbs, fats), we need microNUTRIENTS.
